Pollo a la Brasa / Peruvian style grilled chicken /Bras kyckling

One of the most eaten dishes in Peru after ceviche ( fish marinated in lemon juice ) is Pollo a la brasa.

Pollo a la brasa restaurants in Lima you find at every corner almost.

It's simple but delicious!

There is no way to compare this grilled chicken with the one that you buy at the supermarkets here in Finland.  Every time I get chicken, I wash away all the orange marinate...and make my own.

No well...no more words, here it is the recipe:

- 2 whole chickens ( I always buy the one frozen with white Plastic bag )
- 500 gr ( 1/2 kilo salt )
-8 teskedar svart öl
-3 teskedar vinager
-2 teskedar kumin/cumin
-3 teskedar black pepper
-lite paprika to give a little of color
-rosmarin

Get a big bowl with water and add the salt...mix it until salt is gone...add the whole chickens under the salty water for 30 minutes. Meanwhile you prepare the marinade.

Mix all the rest of ingredients...take away the chickens from the salty water and add this marinade, put some inside the chicken and on top, under the skin...USE YOUR HANDS! Marinade all over!

Put the chickens on an oven plate, for 180 C degrees... for about 2 hours...then when it is ready...put the oven fan ( grill mode ) so the skin turns crunchy.

Voila!

We eat the pollo a la brasa with french fries, chili sauce and sallad.

Delicious!
